To celebrate India’s Republic Day on 26 January, we’re shining a light on one of the standout Indian dishes at DXB: chicken biryani at Food Village’s Taste of India in Terminal 3, C-Gates.
The chefs follow a painstaking recipe to achieve perfection. A whole chicken is marinated overnight with yoghurt, ginger, garlic and red chilli paste, before being gently cooked with basmati rice, spices, golden fried onions and butter.
The succulent and fragranced dish is served alongside salan, a gravy made with coconut, sesame seeds and peanut as well as a mixed vegetable raita.
